INGREDIENTS

2lb cod or haddock (but any mild flaky fish will work)

1 1/2 cup crushed Ritz Cracker crumbs

8 tbls salted butter melted (divided)

Salt and pepper

Juice and zest of one lemon

1/4 cup parsley

Baked New England Cod

INSTRUCTIONS

Preheat oven to 400F.

Butter a casserole dish or sheetpan using 2 tbls melted butter. Lay the fish on top and season both sides with salt and pepper.

Mix together the crumbs with the zest, parsley and 6 tbls of melted butter. Mound the crumbs over the fish.

Bake for 20 minutes, or until fish is cooked thoroughly (and flakes easily). Remove from oven and squeeze lemon over it
